An Easy Vegan Gingerbread Recipe

Let’s be honest, the best bit about Christmas is the food. I’m all about my favourite things at Christmas and gingerbread is 100% one of them. It always tastes so good and it’s one of those things that anyone can make, it’s just so easy to do. Even though I’m not the greatest at decorating, it is a lot of fun, and gingerbread always goes so deliciously with a cup of tea.

So are you ready to get into the festive spirit with a very easy gingerbread recipe – perfect for leaving for Santa on Christmas Eve!

Ingredients

  • 2 cups plain flour
  • 1/4 cup vegan butter
  • 1/2 cup brown sugar
  • 1/4 cup agave nectar
  • 1/4 teaspoon sea salt
  • 1/4 cup vegan milk (I used soya)
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon ginger
  • 1/2 teaspoon baking powder

Ingredients – Icing

  • 1 cup powdered sugar
  • 2 tablespoons vegan milk (I used soya)
  • 1/4 teaspoon vanilla

Method

  1. In a bowl mix in all of the ingredients until you’ve got a mixture that is completely combined.
  2. Put some extra flour down on your surface and on the rolling pin so when you roll the dough out it doesn’t stick.
  3. Continue to roll out the dough until you can’t get any more biscuits from it. I managed to make around 28 however I made miniture ones!
  4. Put in the oven on Gas Mark 4 for 20 minutes or until they’re golden brown on the top.

Once your biscuits have cooled down you can get to the fun bit which is the icing!

  1. Measure out yur powdered sugar and in a bowl combine all of the ingredients. You don’t want a runny icing. If it goes a bit too runny add some more icing sugar to thicken it up.
  2. If you want colourful vegan friendly icing you can buy them premade or you can make your own!
