Easy and Gooey Salted Caramel Blondies*

We all know I love my food, whether it is blondies, brownies, pizza, cake, fruit, I’m there for all the food in the world. Caramel is something I absolutely adore, I am a sucker for it all the time, caramel lattes, you name it, it’s my favourite! So in collaboration with Good Hemp I’ve come up with a super easy blondies that are tasty full of flavour and really easy to make! I’m all for easy recipes and when they taste this good, you can’t go wrong can you? So are you ready for a super delicious recipe? Lets go!

Ingredients – Blondies

  • 220 grams plain flour
  • 120g white chocolate (I use Sainsburys Free From)
  • 5 spoonfuls of cashew butter
  • 130g caster sugar
  • 3 tbsps. hemp oil
  • 170ml vegan milk (I used the original Good Hemp Milk
  • 1 tsp baking powder
  • 1 tsp salt

Ingredients – Caramel

  • 200g of cane sugar – I used coconut sugar
  • 3/4 can of coconut milk
  • 1 tsp salt (salt to your taste)

Method – Caramel

  1. Heat a pot of water until boiling and put a glass bowl over the top with the sugar in.
  2. Add the coconut milk and combine the ingredients.
  3. Add 1/4 of the salt and stir in.
  4. Leave the caramel for around 15 minutes on a medium to low heat and stir through occasionally.
  5. Once it’s started to stick to the back of your spoon, add the rest of the salt and stir through.
  6. Pour into a jar (I used a Kilner jar) and allow to cool – I left mine to cool for about 3 hours, this means it should thicken up fabulously leaving you with delicious caramel.

Method – Blondies

  1. Start off by melting the white chocolate in a glass bowl over a saucepan, it won’t take too long and when it’s done set it aside.
  2. Combine all of the other ingredients besides the melted chocolate for now, but don’t overmix them.
  3. Now you’re one step closer to gooey blondies. Now combine the melted white chocolate with the rest of the mixture. Slowly combine.
  4. Put in a lined tin at Gas Mark 5/190 degrees C/375 degrees F for 20 minutes or until golden brown on the top.
  5. Spread the caramel that you made earlier over the top and voila!
