Easy Vegan Fudgy Brownie Recipe

Homemade brownies are always a must, but this morning I made double chocolate vegan fudgy brownies & they’re amazing. The brownies have my favourite vegan chocolate, to make a rich, and delicious brownie, perfect with a cup of coffee.

If you need a really easy recipe for brownies, that will satisfy your sweet tooth, then look no further. You sweet tooth will be satisfied in less than 45 minutes and you will not be able to get enough.

If you want to switch it up, you can add other flavours in, like biscoff, salted caramel, oreo, peanut butter and more The possibilities are endless, and the great thing about this recipe is it is so versatile, that you can make the recipe anything you want it to be!

So how can you make this really easy recipe & what will you need?

Ingredients

  • 130g self raising flour
  • 1 teaspoon vanilla paste
  • 110g caster sugar
  • 90g cacao powder (or cocoa powder)
  • 1/2 teaspoon salt
  • 80 ml vegetable oil
  • 100 ml vegan milk (I used Alpro Oat)
  • 100g vegan white chocolate (I use Sainsburys own dairy-free bar)
  • 70g vegan milk chocolate (I use NOMO)

Method

  1. Preheat your oven to Gas Mark 6 or 200°C.
  2. Start by mixing your self raising flour, caster sugar, cacao powder, salt, vegetable oil and milk and combine in your mixer. Do not over mix your ingredients though, it should take less than a minute, depending on your mixer.
  3. Once combined, you will need to start melting your chocolate, over a saucepan of hot water, and in a glass bowl, start melting your chocolate. Make sure you continue to mix your chocolate as you do not want it to stick and burn to the bottom. Make sure that your hob isn’t on too high either.
  4. Once melted, combine your melted chocolate with your ingredients from your mixer.
  5. Add your mixture to the tray (I used a 29cm x 19cm tray)
  6. Cook for 30 minutes
  7. Once cooked, leave to cool & enjoy.
