Breakfast is definitely one of my favourite meals of the day, it gets me going, it gets me set up for the day and I genuinely adore it. At the weekend my husband always makes the best breakfast in the world and it’s genuinely one of my favourites, full of delicious goodness, super filling and really quick to make.
I’ve also been trying a new bread, it’s from a brand I’ve not heard of before, and they’re honestly amazing! They’re called Everfresh and they literally do so many different types of bread. The one I have used for this breakfast recipe is the plain and simple sprouted wheat bread. It’s got such a different taste to normal bread, to me it is a bit sweeter, but goes perfectly with this breakfast. You also don’t need a lot of it because it has a denser consistency to regular bread.
Soo, are you ready to find out the recipe?
Ingredients
- 1 avocado
- A handful of spinach
- 10 tomatoes
- 1/2 a pepper
- Vegan bacon – I use Cheatin’s rashers
- 1 slice of Everfresh bread per person*
Method
- Start off by cooking off your tomatoes, and peppers, give them about a minute just to cook off.
- Now add in your spinach (remember that spinach shrinks a lot, so add in quite a lot. I’m a big spinach fan to be honest.
- Add in your vegan bacon rashers. You get about 7 rashers in a pack, so Paul and I usually do about 2 each because that is more than enough for us with all the veggies.
- Now add in your avocado chunks, and slowly cook off. This will leave you with a super creamy consistency and it works so well with the other ingredients.
- Toast off your Everfresh bread, I’m more of a warm bread kind of person and this goes perfectly.
Once everything is cooked through, you’re ready to serve!

Voila, one of my favourite breakfasts at the moment, especially when I have so much to do and need all the energy to get me through the day.
Overall the bread has become a firm favourite in my house. There is lots of variety too with this brand, there are so may different flavours to try, the rye sourdough is another favourite of mine.
The other thing about the bread is it lasts so long! It has a much longer best before date on it and it just tastes amazing! I’ve definitely been converted!
