Vegan Biscoff Doughnuts Recipe

Pretty much every vegan I know is eternally grateful for the fact that Biscoff is vegan friendly, so let’s just take a moment to thank everyone for that. Anyway as I was saying I thought I would do a baking post, because it has been quite a while since my last foodie post. I like to make my recipes so easy to follow and literally as quick as possible, because let’s be honest, no one likes waiting around for food to cook do they? So are you ready for the most delicious recipe ever & I promise you it won’t take long!

Ingredients – Doughnuts

  • 2 cups flour
  • 1 cup brown sugar
  • 1/2 cup milk (I used almond milk)
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 2 heaped tablespoons Biscoff spread
  • 1 teaspoon salt
  • A small amount of butter to grease the doughnut tin

Ingredients – Icing

  • 2 cups powdered sugar
  • 10 teaspoons water (add slowly!)
  • 1 teaspoon vanilla extract
  • Biscoff biscuits to top

Method – Doughnuts

  1. Preheat your oven on Gas Mark 6.
  2. Make sure you grease the doughnut tin with the butter, better to use more than less!
  3. Mix together all of the ingredients for the doughnuts and continue until all is mixed together completely.
  4. Once all mixed together slowly pour into the doughnut tin. If you want quite large doughnuts then I did overfill them a little bit but there is no problem with that!
  5. Put in the oven on Gas Mark 6 for 15 – 20 minutes.
  6. Leave to cool until icing!

Now onto the icing for you guys!

Method – Icing

  1. You have your 2 cups of powdered sugar in a bowl, now slowly add the teaspoons of water while mixing! It might go lumpy but don’t panic too much, continue to mix until smooth. My mixture was quite thick, if it is too runny, add some more powdered sugar!
  2. Once you’re happy with the consistency spread onto the top of your doughnuts slowly, it might run a little bit depending on the consistency but don’t worry about that!
  3. Crush up some Biscoff biscuits to put on top and voila!

      Mine is one with the holes in it, but if you want a circular one, you can just use a muffin tin instead! xxxx
