So I am always on the lookout for amazing new foods to try and eat, but not only that, I like to keep it fabulous and healthy! I think sometimes people think that when it comes to healthy food it just has to be a boring salad, no dressings, or anything like that and it just is so bland, well I am challenging that with an amazing and colourful salad that is full of flavour, filling and absolutely perfect for summer. This meal is so healthy, is full of delicious veggies, and not only that it’s officially one of my favourite meals ever. The mixture of both of the quinoa’s it honestly makes the meal perfect, the red quinoa gives it a very nutty flavour and the black quinoa is very sweet and it gives you the best of both worlds. So are you ready to find out how to make this delicious meal?

- 150g red quinoa
- 150g black quinoa
- 1 tin butter beans
- 1 tin kidney beans
- 3 carrots chopped
- 100g sweetcorn
- 100g peas
- 1 vegetable stock cube
- First start off by boiling the water for your quinoa, it should take around 15 minutes, you will need to keep checking as you go along just to check on how cooked it is. Add in some pepper and salt to the water just to add in the flavour.
- Next add the beans to a separate pan get those cooking as you go, add in some chilli, and the stock cube, and continue to stir in. Slowly add in the peas, carrots and sweetcorn. Leave them to simmer for a while to let the flavour mellow.
- Once your quinoa is cooked, drain it off and it to the pan with the beans, carrots, sweetcorn and peas and mix thoroughly. This allows the quinoa to take on the flavours from the stock cubes and the chilli, and it makes it taste extra fabulous!
- Finish off by serving with a wonderful side salad and just enjoy!
